Why Shirataki Noodles is the New Cauliflower

Shira- whatt?  My obsession with  Miracle Noodles aka shirataki noodles began 2 years ago during my pregnancy. They’ve turned into a full-blown food group for me that I credit for keeping me lean and completely satisfied every, damn, day. I’ll admit it at least twice a day. Okay… if the first step is admitting…it’s a food group of mine. Are you ready to have your mind blown? They are FIVE calories, gluten free, low carb, and the best part – they take on the taste of everything and anything. Sundays is our meal prep day, where I attempt to cook most everything for the week *operative word is attempt*, these noodles are my go-to base accompaniment for nearly everything.

So here’s the deal.

Most of the noodles come in water, so you have to drain them. Full disclosure, they have a smell to them at first, but don’t let that deter you as they take on whatever taste you want them to.  Next step is to sauté them and add a sauce, cheese, toss them into a broth – hell I’ve even made a pizza with them {another recipe coming to you soon}. I’m so obsessed with them, I’ve made my hubby the “I-wont-try-those-things,” kind of man into a complete convert. The twins love them too!

Shirataki Noodle Recipe

Here’s a quick balsamic tomato basil slow cooker recipe that I layer on top of my favorite Miracle Noodles that I made for the family. The full prep will take you 4 minutes and it’s super healthy too. Here’s what you’ll need:

Ingredients

  • Your choice of Miracle Noodles or Rice
  • 2 garlic cloves minced
  • 1 1/2 pound of tomatoes {I used these pretty different shapes and colored ones}
  • 3 tablespoons balsamic vinegar
  • 4 tablespoons extra virgin olive oil
  • Pinch of Truffle salt
  • 2 lbs of boneless chicken

Instructions

  1. Throw all ingredients into slow cooker
  2. Turn on slow cooker to high for 4 hours or low for 6 hours
  3. Sautee Miracle Noodles in Olive Oil Spray
  4. Serve Chicken on top of Miracle Noodles and Voila!
